Cooking method:

Preparing the chicken skewers:

  1. In a bowl mix the olive oil, garlic oregano, salt, and lemon juice
  2. Add the diced chicken and mix well. 
  3. Marinate for 15 minutes.
  4. Place the chicken pieces on skewers and grill under a hot griller until chicken is a light golden colour on all sides.

Preparing the vegetables:

  1. Place the vegetables on a platter with potatoes around the outside edge, then arrange carrots on the inside edge of potatoes, then zucchini, broccoli, cauliflower and the beans in the centre.
  2. Cover with microwave-safe plastic wrap. Cook in a microwave for 7 minutes on high.
  3. Use a skewer to test if potatoes are soft. If not, cook for a few more minutes.
  4. Re-cover and allow to stand for 3 minutes before serving with grilled chicken skewers.

To serve, place the chicken skewers on top of the vegetable platter.
