Cooking method:

  1. Heat oil and cook onion gently for 3 to 4 minutes.
  2. Add coriander powder and cumin and cook for a further 2 minutes.
  3. Add carrots, apple and chicken stock, cover and simmer for 7 to 8 minutes.
  4. Sprinkle with fresh coriander and serve hot.
