Cooking method:

  1. Place tomatoes on a baking tray, cut side up and brush with half the oil. Sprinkle with oregano and roast in a moderate oven for 35 minutes.
  2. In a saucepan heat the cumin seeds for 20-30 seconds. Add the remaining oil, turmeric, ground coriander, onion and garlic and saute until aromatic and the onions are translucent.
  3. In a food processor, blend butter beans and cottage cheese until smooth. Add the onion mixture and blend.
  4. Toast the bread.
  5. Spread the bean mixture over toasted bread. Top with roasted tomatoes and sprinkle with fresh oregano.
