Cooking method:

  1. In a mixing bowl, combine the corn, chilli, garlic, shallots, eggs, milk, flour mixture and pepper. Mix into a batter and let stand for 30minutes.
  2. Heat a non-stick frying pan with a very small amount of canola oil. When medium-hot, add a spoonful or two of corn mixture to create a corncake about 10cm wide.
  3. When the corncake is golden brown, flip and cook the other side. Remove from the pan and cook three more the same way.
  4. To serve, top corncakes with rocket and 2 shaved parmesan.
