Salad - pasta with yoghurt poppy seed dressing

Serves: 6

Ingredients:
500 g pasta shells, cooked
150 g snow peas, blanched
250 g cherry tomatoes, cut in half
1 X 425g can tuna in springwater, drained

Pasta salad with yoghurt poppy seed dressing

Poppy seed dressing:
1/2 cup natural reduced fat yoghurt
1 tablespoon lemon juice
1/4 teaspoon dried rosemary leaves
1 teaspoon dried basil
1 teaspoon dried mustard powder
1/2 teaspoon poppy seeds
1 tablespoon chopped fresh parsley

Method:
1. Combine pasta, snow peas, tomatoes and tuna in a large serving bowl.
2. Place dressing ingredients in a screw top jar and shake until well combined.
3. Pour over salad and toss.

Notes: For variety you can substitute diced cooked skin-free chicken instead of the tuna.
Use egg free pasta if you are preparing food for people with an allergy to egg.
